Chicken Adobo

Chicken adobo is a very easy dish to make, and it is considered by some to be the national dish of the Philippine Islands.
 
3 lbs chicken thighs, cut into chunks
½ cup white vinegar
½ cup soy sauce
1 tablespoon coarse ground black pepper
1 tablespoon brown sugar
2 crushed garlic cloves
3 bay leaves
½ teaspoon salt

Put the vinegar, soy sauce, pepper, sugar, salt, and garlic cloves in a blender. Chop until the garlic is well divided. Pour some of the blended liquid into a pan, add the chicken chunks and bay leaves, then add the rest of the liquid and cover the pan.

Let the chicken marinate for 1-3 hours. Then heat on high until the marinade begins to boil. Lower the heat and simmer (covered) for 30 minutes.

Remove the cover and simmer for another 15 minutes. (Stop if/when most of the liquid has already evaporated.)

Serve over white rice.
